The Sun is Shining

On a local news station this morning they were joking about the weather report today: sunshine.
Apparently the incredible dark feeling of this month has not been all in my head. The news reporter said that out of the first sixteen days of February there were six entire days with zero sunshine. And as far as the other ten days were concerned they said we've only had 16% sun this month. Basically, us folks in West Michigan have been living under cloud cover for the past two weeks straight. Add snow, cold, and horrible roads to that... Hooray for sunshine right now!

2. Try out Cream Cheese Mints recipe

One of the fourteen "attempt to redeem February" goals has been marked off. Last night little Abe and I whipped up a very tiny batch of Cream Cheese Mints. I have had this recipe pinned for quite sometime so it's nice to have given it a go. I had the four ingredients on hand so I didn't have to purchase anything special for this (although we're out of powdered sugar now). And this recipe is super quick. Okay, mine look horrible but the flavor is great! This is a recipe I will definitely make again. They are super sweet, like almost too sweet. The couple of hours to set is more like overnight. But only four ingredients, fun little candy, no baking, very yummy. Yep, this was worth a try.

      The flavor of these turned out SO similar to smooth and melty mints but the texture is totally different. I don't know what to compare the texture too. They are really neat though.

  4. I'm glad you got some sun. We had here in Minnesota and it felt so good-even though it was still cold. I wonder if those would work in a spritz gun and make little shapes?

    1. Hm, I might have to give it a try. I have no idea if that would work... Yeah, it was really cold here to but the sun shining in the windows was very nice. It's supposed to warm up tomorrow. Hurray!!!

  5. I've made mints for many years, though not lately. They are delicious, but a little too sweet. It's been sunny and pleasant here in northern Florida--about seventy degrees. I won't be bragging about the weather when June arrives.

    1. Wow! 70 sounds like the desert right now. We do get pretty warm summers, actually here it gets VERY humid so ours summers can get pretty yucky but I bet it gets really humid by you too, being in Florida.

      The mints really were too sweet but as long as I didn't sit down and eat a bunch of them (and I'm proud of myself, I didn't) they were very delicious.

  6. It actually helps me to hear that I am not the only one that is effected by weather. I was in a funk the last few days so now I can blame the weather. It's getting to Den too. I'm north of Chicago and we are supposed to get in the 50s on Friday. Fingers crossed. Maybe our moods will improve.

    1. Oh, I'm completely blaming the weather. You certainly can too! We are north of Chicago on the other side of the lake . I bet we could both go to the lake and wave at each other, haha. I mean, we wouldn't be able to see each other but still :)

      It was REALLY cold here today 9 degrees, but it's supposed to be in the 50s here tomorrow too. I am certain my mood will improve!
